Job Description:

Under the general direction of the VP of Culinary Operations, the Executive Chef is responsible for the overall success of the culinary operations of the San Manuel Casino (SMC). Adhering to the Health department regulations and SMC standards and expectations of food service and quality, freshness and presentation, the Executive Chef will oversee culinary operations to include innovative menu concepts; recipe standardization; labor and food cost control; production and waste control; and purchasing and inventory control. In addition, the Executive Chef will be responsible for the management, training, direction and engagement of the culinary staff.

Essential Duties & Responsibilities

  1. Creates and implements best in class plan, team, and concepts for all culinary venues including opening of new high-volume luxury resort casino, existing casino restaurants, buffets, and quick eat locations including: menus and individual menu items for all food outlets based on current food trends and regional tastes, seasonality, and concepts.

  2. Oversees all culinary related services and accepts responsibility for activities of chefs, cooks and other personnel in preparing, cooking and presenting food to high standards. Ensures all quality culinary dishes are produced and served in a timely, cost-effective and flavorful manner, and sees that any problems that arise are rectified promptly. Enforces food quality standards, freshness and presentation throughout all food outlets in accordance to SMC standards and expectations, and Health department regulations.

  3. Maintains training and certifications applicable to the Culinary team members. Ensures all training, regulatory, inventory, and team member documentation is complete and up to date.

Serves as the technical expert, teacher/trainer and inspiration for cooks and kitchen personnel. Maintains occupational knowledge and skills by conducting research, attending seminars, educational workshops, classes, and conferences. Drives results through staff professional development and appropriate training programs that monitors results through evaluation, inspection, and analysis.

  1. Purchases food inventory and kitchen supplies; manages accuracy of inventory management system.

  2. Monitors and ensures maintenance/sanitation of kitchens, equipment and related areas to ensure a healthy, safe work environment that meets/exceeds federal, state and SMC standards and regulations. Maintains "A" scores for all standards and regulations.

  3. Assesses and monitors culinary outlet repairs to ensure cost effectiveness, establishes criteria for repair versus replacement, and proactively works to circumvent any damages to assets through preventative maintenance.

  4. Designs, implements and supports policies and procedures to enhance and measure quality while promoting innovation; continually updates written policies and procedures to reflect state-of-the-art techniques, and equipment.

  5. Performs other duties as assigned to support the efficient operation of the department.

Supervisory Responsibilities

Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring and training employees with an emphasis on safety; planning, assigning reviewing and directing work; evaluating and appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Education/Experience/qualifications

  • Bachelor's degree and formal culinary education required.
  • Minimum ten (10) years' experience as Executive Chef in Resort or Casino Culinary operation required.
  • Equivalent combination of education and progressive, relevant and direct experience may be considered in lieu of minimum educational/experience requirements indicated above.
  • Working knowledge of office software and equipment such as Microsoft Suite, fax machine, copy machine, calculator and a work station computer.
  • Previous experience utilizing purchasing and procurement software is helpful.

Certificates/Licenses/Registrations

  • At the discretion of the San Manuel Tribal Gaming Commission you may be required to obtain and maintain a gaming license.
  • A qualified candidate/employee must have a valid driver's license with an acceptable driving record as determined by the company's insurance carrier.
  • Must obtain and maintain a ServSafe certification within 90 days of employment.
